Banana Walnut Raisin Bread

Iโ€™ve been baking banana bread my whole life, but this recipe is a healthier version of a traditional banana bread recipe because of my two secret ingredients! (see below)

Enjoy for breakfast or with late afternoon coffee! ๐Ÿ˜

Ingredients:

Three ripe bananas

Two eggs or 6 Tablespoons of Just Egg, egg substitute

1 ยฝ cup of all-purpose flour

1 tsp baking soda

ยฝ tsp salt

1 cup of walnuts, chopped

ยฝ cup of golden raisins

*secret ingredient #1, ยฝ cup of Kirkland Coconut Oil

*secret ingredient #2, ยพ cup of Lakanto monk fruit (sugar substitute)

Instructions

  • Preheat oven to 350 degrees

  • Rub a loaf pan with coconut oil and coat lightly with flour

  • Mash bananas on a shallow plate

  • Using a paddle mixer, cream coconut oil, and monk fruit together until creamy

  • Add bananas and eggs and mix until creamy

  • Sift dry ingredients together (flour, baking soda, salt) in a separate bowl

  • Add dry ingredients to the mixing bowl until incorporated

  • Add chopped walnuts and raisins to the mixing bowl and mix until incorporated

Cooking Steps

Bake at 350 degrees for 50-60 minutes or until a knife comes out clean when inserted into the center!


Let it cool for ten minutes, then turn it out onto a piece of parchment paper.


Let it cool for another ten minutes, then wrap it with parchment paper and plastic wrap to keep moisture in.


Voila! This banana bread is so moist and delicious that I have to make a new loaf every weekend! ๐Ÿคค
