Chilaquiles Veganos!

A delicious plant-based twist on the classic Mexican comfort food! Crispy tortilla chips are smothered in a flavorful homemade salsa, topped with dairy-free cheese, and a sprinkle of fresh cilantro. Perfect for breakfast, brunch, or any time youโ€™re craving a hearty, satisfying meal! ๐ŸŒฑ๐ŸŒถ๏ธ๐Ÿ’š

Ingredients:

๐Ÿ™ One 8 OZ can of tomato sauce

๐Ÿ™ EVOO

๐Ÿ™ Salt & Pepper (S/P)

๐Ÿ™ ยฝ medium white onion, chopped

๐Ÿ™ 1 poblano pepper chopped

๐Ÿ™ 3 cloves of garlic, minced

๐Ÿ™ 1 medium tomato, chopped

๐Ÿ™ ยฝ cup of fresh chopped cilantro

๐Ÿ™ 4 taco sized soft corn tortillas

๐Ÿ™ 1 tsp cumin

๐Ÿ™ 1 tbsp of chili powder

๐Ÿ™ Green Tobasco

๐Ÿ™ One 15 oz can of pinto beans

๐Ÿ™ Vegan cheddar cheese shreds

Instructions:

  1. Cut the tortillas into strips or โ…› triangles.

  2. In a large saucepan, on medium-high heat, sautee the corn tortillas until golden brown and then add the onion, garlic, pepper and tomato until tender.

  3. Add cumin and chili powder and coat all of the sauteed vegetables.

  4. Add the tomato sauce and season with S/P and more Tabasco as needed

  5. Drain the pinto beans and pour into a medium-sized bowl. Mash with a potato masher and add cumin, chili powder, tabasco, finely chopped cilantro and finely chopped onion.

  6. In a medium saucepan, sautee the mashed beans on medium-high heat until hot, stirring often.

  7. Plate the chilaquiles on one half of your plate and add a serving of the beans on the other half.

  8. Top the beans with vegan cheddar shreds

  9. Add freshly chopped cilantro on top of the chilaquiles
