Chilaquiles Veganos!
A delicious plant-based twist on the classic Mexican comfort food! Crispy tortilla chips are smothered in a flavorful homemade salsa, topped with dairy-free cheese, and a sprinkle of fresh cilantro. Perfect for breakfast, brunch, or any time youโre craving a hearty, satisfying meal! ๐ฑ๐ถ๏ธ๐
Ingredients:
๐ One 8 OZ can of tomato sauce
๐ EVOO
๐ Salt & Pepper (S/P)
๐ ยฝ medium white onion, chopped
๐ 1 poblano pepper chopped
๐ 3 cloves of garlic, minced
๐ 1 medium tomato, chopped
๐ ยฝ cup of fresh chopped cilantro
๐ 4 taco sized soft corn tortillas
๐ 1 tsp cumin
๐ 1 tbsp of chili powder
๐ Green Tobasco
๐ One 15 oz can of pinto beans
๐ Vegan cheddar cheese shreds
Instructions:
Cut the tortillas into strips or โ triangles.
In a large saucepan, on medium-high heat, sautee the corn tortillas until golden brown and then add the onion, garlic, pepper and tomato until tender.
Add cumin and chili powder and coat all of the sauteed vegetables.
Add the tomato sauce and season with S/P and more Tabasco as needed
Drain the pinto beans and pour into a medium-sized bowl. Mash with a potato masher and add cumin, chili powder, tabasco, finely chopped cilantro and finely chopped onion.
In a medium saucepan, sautee the mashed beans on medium-high heat until hot, stirring often.
Plate the chilaquiles on one half of your plate and add a serving of the beans on the other half.
Top the beans with vegan cheddar shreds
Add freshly chopped cilantro on top of the chilaquiles
