Creamy wild mushroom soup!

I love mushrooms; I mean, I REALLY love them. Mushrooms are not only interesting to look at; they have so many colors, textures, and flavors. Plus, they are so healthy and nutritious that they make an excellent substitute for those transitioning to a plant-based diet. This is one of my favorite recipes. I normally emulsify it into a bisque, but I’ve left it chunky style today! I hope you enjoy it as much as we do! πŸ˜πŸ„*secret ingredient alert!*

Ingredients:

1 container of Hen of the Woods, chunked

1 container of Yellow Oyster, chunked

1 container of King Mushrooms, chunked

1 container of Lions Mane, chunked

3 TBSP EVOO

Note: You can use any type of mushrooms you can find at your local organic store; these were in season this week!

I shallot OR white onion finely minced

2 cloves of garlic, finely minced

32 oz of organic vegetable broth

Β½ cup of good white wine (not cooking wine)

*8 oz of Miyokos plant milk Mozzarella*

*Black truffle oil*

Note: If you cannot find Miyokos, use 8 oz of organic half & half.

Salt and pepper to taste

Fresh herbs to garnish and serve with a crusty bread!

Preparation

  • In a medium pot, brown the garlic and shallot in 3 tbsp of EVOO

  • Add all the mushrooms and cook until soft and lightly brown, about 3-5 minutes on medium heat.

  • Add the vegetable stock until it comes to a boil.

  • Add salt and pepper to taste

  • Add the white wine

  • Add Miyokos OR half & half

  • Cook for another 2-3 minutes on medium heat

  • Remove from the heat

  • Add a drizzle of the truffle oil on top and mix it in well.

Note: Truffle oil is powerful stuff, so add only a drizzle, or it will ruin the dish!

Plate

Serve in a bowl, garnish with your favorite herbs like fresh thyme or oregano, and serve with a crusty piece of bread or wild rice!
