Crisp & Crunch Harvest Salad

Enjoy the perfect balance of earthy flavors and sweetness in my Crisp & Crunch Harvest Salad. Made with fresh broccolini, savory shiitake mushrooms, protein-packed chickpeas, sweet craisins and more! It's a deliciously satisfying dish for any occasion.

I use an air fryer for this recipe!

Ingredients:

πŸ™ 2 cups Broccolini or Broccoli heads

πŸ™ 1 large handful of Arugula

πŸ™ 1 can of chickpeas, rinsed

πŸ™ ΒΎ cup of craisins

πŸ™ ΒΎ cup of shitake

πŸ™ ΒΎ cup of frozen peas

πŸ™ ΒΎ cup of wild rice

πŸ™ 1 Β½ cup of vegetable stock

πŸ™ Salt & pepper to taste (S/P)

πŸ™ Fresh cilantro

πŸ™ 1 lemon

πŸ™ EVOO

Instructions:

  1. Rinse and steam the broccolini heads in the microwave for 2 minutes.

  2. Large chop the shitakes and season with EVOO, S/P and cook in the air fryer for 7 minutes at 400 degrees

  3. Cook the rice, 3 Tbsp of EVOO, and vegetable stock on the stovetop or in a rice cooker as instructed.

  4. In a large bowl, combine the arugula, chickpeas, craisins, and frozen peas. Once cooled, add the broccolini, shitakes, and rice.

  5. Squeeze the juice of one lemon and add equal parts of EVOO to a container, season with S/P and finely chopped cilantro.

  6. Pour over the salad, mix well, and serve!
