Hearty Pea Soup

Warm up with this hearty pea soup! Packed with tender peas, fresh veggies, and savory seasonings, it’s a comforting, nutritious meal perfect for any day of the week. Simple, wholesome, delicious and packed with protein!

I use an emulsifier for this recipe!

Ingredients:

πŸ™ 1 pound bag of split peas, rinsed

πŸ™ EVOO

πŸ™ Salt & Pepper (S/P)

πŸ™ 1 medium white onion, chopped

πŸ™ 1 cup of chopped celery

πŸ™ 3 cloves of garlic, minced

πŸ™ Β½ tsp of fresh, minced rosemary

πŸ™ 1 can of sweet peas

πŸ™ 2, 32 oz boxes of vegetable stock

πŸ™ Smoked paprika

πŸ™ 1 bag of frozen peas

πŸ™ Fresh snow pea pods for garnish

Instructions:

  1. In a large dutch oven, on medium heat, sautee the onion, celery, rosemary and garlic in EVOO until tender. Season with S/P and smoked paprika.

  2. Add 1 box of vegetable stock to the pot and adjust temperature to high.

  3. Add the rinsed split peas and cook for about 30-45 minutes until tender.

  4. Drain the can of sweet peas and add to the pot and add the second box of vegetable stock.

  5. Once the split peas are completely soft, remove from the heat and emulsify until smooth. Add more S/P, and smoked paprika for taste.

  6. Once you’ve reached the desired consistency, add the bag of frozen peas and return it to the stove on low-medium heat.

  7. Serve and garnish with snow pea pods.
