Protein-Packed Three-Bean Salad with Fresh Cucumber & Cauliflower

Ingredients:
1 can of cannolini beans
1 can of pinto beans
1 can of chickpeas
2 cups of frozen peas
ΒΌ sweet onion, chopped
1 head of cauliflower, roasted
6 persian cucumbers, chopped
1 cup of fresh chopped cilantro
2 cups of cooked quinoa
ΒΎ cup of apple cider vinegar
ΒΎ cup of EVOO
Salt & Pepper (S/P) to taste
Indian spices or smoked paprika
Instructions:
Combine into a large bowl:
Rinse the beans with cold water and add.
Add the frozen peas
Add the onion
Using an airfryer or oven, break up the cauliflower into large rosettes and roast at 400 degrees for 20 minutes. (I used indian spices with EVOO during roasting, but you can use whatever spices you can find in your cabinet.)
Once cooled, chop into smaller bites and add to the bowl
Add the cooked and cooled quinoa to the bowl. (I use vegetable stock in my rice cooker to cook the quinoa.)
Add the chopped cilantro
Mix the vinegar and EVOO with S/P to taste and pour on the salad.
Mix it all and enjoy!
Tips & Variations:
Spice things up with indian spices or add smokiness with smoked paprika!
Serving Size: 3-4 quarts, great for parties!
Prep Time: 20 minutes
Cook Time: 20 minutes to cook the cauliflower and the quinoa
Total Time: 30 minutes
