Roasted Butternut Squash Soup

This roasted butternut squash soup is the perfect combination of sweet, savory, and creamy. The natural sugars in the squash caramelize as it's roasted, bringing out its rich flavor and depth. I use an air fryer and an emulsifier for this recipe!

Ingredients:

πŸ™ 1 medium butternut squash, quartered with seeds removed

πŸ™ EVOO

πŸ™ Salt & Pepper (S/P)

πŸ™ 1 medium white or yellow onion, chopped

πŸ™ 3 cloves of garlic, minced

πŸ™ Β½ TBSP of fresh, minced rosemary

πŸ™ 1 TBSP of fresh, chopped sage

πŸ™ 32 oz of vegetable stock

πŸ™ Smoked paprika

πŸ™ Fresh basil leaves for garnish

Instructions:

  1. Place the quartered butternut squash, open end up in the air fryer and spritz with EVOO, S/P and smoked paprika. Cook at 400 degrees for 30 minutes or until golden brown and tender with a fork.

  2. Sautee the onion and garlic with EVOO, S/P in a medium saucepan. Once tender, add the rosemary and sage. Cover and turn off the heat to allow the aromatics to infuse the onions and garlic, without burning them.

  3. Once cooled, use a large spoon and scoop out the squash and put it into the saucepan with the other cooked ingredients.

  4. Add the vegetable stock and emulsify. (a blender will also work)

  5. Place back onto the stovetop and heat until the desired temperature is reached.

  6. Spoon into a bowl and add a sprinkle of smoked paprika, with the fresh basil or toasted pumpkin seeds as a garnish.

  7. Serve with garlic bread crostini and enjoy!
