Roasted Eggplant Dip!

This rich and flavorful vegan dip is made with roasted eggplant, red onion, and red bell pepper, pulsed to creamy perfection. With a hint of tang and natural sweetness, it’s perfect for dipping with pita chips, or fresh veggies. A delicious, wholesome appetizer or snack! 🌱πŸ”₯πŸ₯£

Ingredients:

πŸ™ One medium eggplant, cubed, skin on!

πŸ™ EVOO

πŸ™ Salt & Pepper (S/P)

πŸ™ 1 small red onion, quartered

πŸ™ 1 red bell pepper, seeded and quartered

πŸ™ 1 head of garlic, cut in half, skin on!

πŸ™ Fresh parsley, chopped

πŸ™ 1 lemon wedge

πŸ™ Tahini

πŸ™ Pita chips or fresh vegetables

Instructions:

I use an air fryer and a Cuisinart for this recipe!

  1. Spritz with EVOO and season with S/P the cubed eggplant in batches in the air fryer at 400 for 15 minutes until brown. 1 eggplant usually takes about 2-3 batches, spread evenly.

  2. Spritz the red onion, garlic (cut side up) & bell pepper with EVOO and S/P and roast in the air fryer at 400 for 20 minutes until brown.

  3. Once the garlic has cooled, squeeze the soft cloves out of the garlic skin and add to the Cuisinart with the rest of the cooled veggies. Use a regular chopping blade in your food processor.

  4. Add 2 TBSP of Tahini

  5. Add 2 TBSP of EVOO

  6. Add the juice of one lemon wedge

  7. Add Β½ of the fresh parsley

  8. Pulse everything together until smooth but still chunky.

  9. Serve in a bowl and top with the rest of the chopped parsley and serve with pita chips or your favorite fresh vegetables!
