Roasted Salsa Bandera! ๐ถ๏ธ
I make a roasted version of Salsa Bandera in my air fryer. Roasting vegetables enhances and brings out their natural flavors. This salsa is excellent on tacos or simply enjoyed with a bowl of chips! ๐๐ถ๏ธ๐ซ
Ingredients:
๐ถ๏ธ3 medium ripe tomatoes
๐ถ๏ธ4 poblanos
๐ถ๏ธ1 lime
๐ถ๏ธ1 medium white onion
๐ถ๏ธFresh cilantro
๐ถ๏ธSalt and Pepper (S/P)
๐ถ๏ธ1 clove garlic
๐ถ๏ธCuisinart
๐ถ๏ธGreen Tabasco (optional for more heat)
๐ถ๏ธEVOO
Instructions:
I always use a parchment liner in my air fryer for more effortless cleanup!
Spritz two of the three tomatoes with EVOO, S/P, and roast at 400 in the air fryer for 20 minutes.
Slice down through the onion, but not all the way through, spritz with EVOO, S/P, and roast at 400 degrees in the air fryer for 20 minutes.
Spritz the poblanos with EVOO S/P, and roast in the air fryer at 400 for 20 minutes.
Let the tomatoes & onion cool.
Place poblanos in an air-tight container and let them cool. Once cooled, remove the stems, seeds, and outer skin with your fingers.
Put roasted tomatoes + the fresh tomato in the Cuisinart, add the onion, garlic glove, and poblanos + the juice of one lime. Add S/P and green Tabasco to taste and pulse until chunky.
Transfer to a large bowl.
Chop the cilantro roughly, add to the bowl, mix, and season with S/P and/or Tabasco as needed.
Voila! Serve with chips, tacos, or your favorite plant-based Latin foods! ๐ฅณ
