Roasted Tomato Soup with Garlic Parm Crustini

Roasted Tomato Soup with Garlic Parm Crustini
It's soup time! Time to warm up and enjoy a hearty bowl of hot, delicious soup. This is one of my favorite easy recipes to prepare for my family on a cold winter's day.
I use an air fryer and an emulsifier for this recipe!
Ingredients:
π 1 Β½ pounds of grape tomatoes
π 1, 24 oz jar of roasted red peppers, drained
π 1 whole head of garlic
π 16 oz of Vegetable stock
π EVOO
π Salt & pepper to taste
π Fresh Basil
π Fresh Parsley
π Β½ cup of cheese or cream
π ΒΌ of a baguette
π Garlic powder
Instructions:
Cut the garlic in half and spritz with EVOO. Place in the air fryer at 400 for 20 minutes or until soft.
Remove the garlic and add the tomatoes to the air fryer. Spritz with EVOO and season with salt and pepper, roast at 400 for 20 minutes.
Add the chopped parsley and basil to the air fryer at the end and let it hang out with the tomatoes for a few minutes.
Remove the garlic cloves from the garlic paper and add this along with the peppers to a large bowl.
Add the tomatoes, basil, and parsley to the bowl.
Emulsify on the low setting, adding vegetable stock until the desired consistency or thickness.
Finish with either the cheese or cream for extra creaminess, but you can also leave this ingredient out!
Cut the baguette in half and spritz with EVOO, a little salt and pepper and sprinkle with garlic powder and more cheese.
Bake in the air fryer at 400 for 6-7 minutes until brown.
Voila! A hot, hearty, delicious, easy homemade tomato soup, enjoy!π₯³PSβ¦.you can also use this on top of your favorite pasta!π
