Sweet Potato Stacks! πŸŽ„πŸŽ…

Sweet potatoes are a naturally delicious and healthy favorite of mine. They are also among the most popular dishes prepared during the holidays. Here’s my twist on a holiday classic that even your kids will love! This super easy recipe can also be prepared ahead of time.

Ingredients:

πŸ™ 2 large sweet potatoes peeled

πŸ™ Old Bay or your favorite seasoning to taste

πŸ™ Smoked Paprika

πŸ™ 3 TBSP of EVOO

πŸ™ Large zip lock bag

Instructions:

  1. Using a mandolin or slicer, slice the potatoes width-wise to the thickness of a kettle chip and place them in a large bowl.

  2. Add the EVOO

  3. Add the Old Bay and mix the slices in the bowl with your hands until evenly coated.

  4. Put the potato slices in the zip-lock bag.


Preheat the oven to 375 degrees on the convection setting.


Stack the slices into muffin tins until they are just over the top of each tin. The potatoes will shrink in the oven as they cook.


Sprinkle smoked paprika on top of each stack.


Bake in the oven for about 25 minutes until potatoes start to turn brown on top.


Voila! A fun take on a holiday favorite, enjoy!πŸ₯³
