Three Bean Vegan Chili

This hearty Three Bean Vegan Chili is packed with protein-rich beans, vibrant veggies, and bold spices, this plant-based recipe is easy to make, deliciously satisfying, and perfect for any occasion.

Ingredients:

πŸ™ One 15 oz can each of red beans, black beans and pinto beans

πŸ™ EVOO

πŸ™ Salt & Pepper (S/P)

πŸ™ 1 medium white onion, chopped

πŸ™ 1 red bell pepper chopped

πŸ™ 3 cloves of garlic, minced

πŸ™ 1 large tomato, chopped

πŸ™ 1 cup of fresh chopped cilantro

πŸ™ One 28 oz can of diced tomatoes

πŸ™ 1 tsp cumin

πŸ™ 1 tbsp of chili powder

πŸ™ Franks Red Hot or Tobasco

πŸ™ 1 cup of fresh or frozen corn

πŸ™ Corn chips for garnish

πŸ™ Vegan cheddar cheese shreds

Instructions:

  1. In a large dutch oven, on medium heat, sautee the onion, garlic, bell pepper and tomato until tender.

  2. Add cumin and chili powder and coat all of the sauteed vegetables.

  3. Add the beans, canned tomatoes and corn.

  4. Season with S/P

  5. Add Franks Red Hot or Tobasco to your liking

  6. Add ΒΎ of a cup of the fresh cilantro just before serving.

  7. Serve in a bowl and top with more cilantro, cheese and corn chips.
